Jhon Wilson Poveda is one of our main relationships in Acevedo, Huila. We've been purchasing his coffee for four amazing years. He is an exceptional producer, and his coffees are exquisite examples of the terroir/profiles of Acevedo, brought about by his extreme dedication to growing, harvesting and processing. JWP has placed in the top ten of the Acevedo Cup four years running. JWP's second place coffee is a beautiful example of what fermentation can do to a coffee. This experimental lot was fermented for 32 hours instead of his traditional 12 hours. This coffee is an open-air aerobic fermentation, and the fermentation style is obvious in the cup profile. This is a beautiful example of adding fruit and complexity to a coffee while still doing a fully-washed process as opposed to natural processing which allows the seeds to dry in their full cherry. While this coffee has quite a bit more fruit than the traditionally washed sixth-place lot, it still retains the structure, clarity, and cleanliness that often get lost in full naturals.
