This is a fun and unique coffee from a newer region to us; Cauca. This is a Tabi selection which is quickly becoming one of our favorite hybrid varieties out of Colombia. In the cup we find excellent fruit nectar sweetness, lively tropicals, and a long clean finish.

Hand picked at peak ripeness. Floated to further remove defects. Depulped. Dry fermented for 48 hours. Dried on raised beds until moisture content reaches between 10%-11%.

Alfonso and his family have dedicated their lives to growing coffee, and his two sons have been gifted part of the farm to start their own small farms. We are proud to roast the coffee of this hard working and dedicated producing family. Inzá and the state of Cauca, situated just north of Huila, have always held great interest of ours, and we are very excited to finally release a coffee from this rather difficult region to work in.
ABOUT TABI
Tabi is a newer hybrid to the scene, having been developed in 2002. It is a cross between Bourbon, Typica, and Timor Hybrid. Tabi was developed as a part of the research to develop a variety that is disease resistant while maintaining good cup quality. Over the last few years this has become our favorite hybrid variety because it provides producers with an excellent disease-resistant choice while also having a very high cup quality potential.
