This is our first year working with producer Francy Burbano. We were introduced to her coffee by our exporting partners in Huila, and we are excited to be featuring this selection in our menu this season. In the cup we find lemonade, strawberry, and oolong tea.

Hand-picked at peak ripeness. Floated to further remove defects. Held in cherry for 36 hours. De-pulped, then dry-fermented in parchment for an additional 48 hours. Washed. Dried on raised beds for 20–25 days.
This is our first year working with coffee from Francy Burbano. While we do not yet know much about her or her farm, we do know it is located at high elevation in a vereda in San Agustín that consistently produces some of the best coffees in the region. We are also excited to share that she recently placed in her first Copa de Oro regional competition.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
