Hand-picked at peak ripeness. Held in-cherry for 24 hours. Floated. De-pulped. Dry-fermented for 36 hours. Dried on raised beds for 20 days until moisture content reaches ~10%.

ABOUT SERVIO BOTINA

During our last visit to southern Huila this past fall, we had the opportunity to visit Servio Botina and his farm, El Cedral. The diversity and scale of southern Huila can feel overwhelming at times, but through years of deliberate and thoughtful exploration, it has become one of the most rewarding regions to work in and learn from. This is the final harvest pass we will be working with from Servio this season, but—as with all things tied to nature—we look forward to seeing what he and his farm bring next year.

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
