Abelardo produced one of our favorite Pink Bourbons last year, and we are extremely excited to be roasting his coffee again. In the cup we find lemonade, ripe blueberry, and hibiscus.

Hand-picked at peak ripeness. Held in-cherry for 24 hours. Floated. De-pulped. Dry-fermented for 36 hours. Dried on raised beds until moisture content reaches ~10%.

This is our second year purchasing coffee from Abelardo. After visiting him and his farm this year, we remain impressed by both his dedication and the quality of Pink Bourbon he produces. This coffee, in many ways, has redefined our expectations for this variety, and it is a true honor and joy to roast his coffee again.

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
