This is our first release of the variety Aji—a newer variety being cultivated in Huila. Aji has been genetically identified as 100% Ethiopian Landrace, and we are extremely excited to see the diversity of varieties in Colombia continue to grow! In the cup we find vibrant acidity, ripe stone fruit, and green grape.

Hand-picked at peak ripeness. Floated. Depulped. Dry fermented for 24 hours. Dried on raised beds for 30 days until moisture content reaches 10.5%.

John is another new producer to our project with The Coffee Quest. We are extremely grateful for their continued support in helping bring this to life, and we look forward to visiting and getting to know all of these producers when we return to Colombia in the fall!

ABOUT AJI

Aji is a newer variety being cultivated mostly in Huila. It is colloquially refered to as 'Bourbon Aji', but genetic testing tells us there is no relation to Bourbon––hence we are simply calling it Aji. Aji is 100% Ethiopian Landrace, belonging to the Core Ethiopia group of varieties like Chiroso, Sidra, Gesha, and Pink Bourbon. While all of these varieties belong to the same group, they maintain significant genetic differences.
