Hand-picked at peak ripeness. Floated. Depulped. Dry fermented for 24 hours. Dried on raised beds for 30 days until moisture content reaches 10.3%.

ABOUT WILSON ALBA

Wilson Alba has lived and worked with his brother Jose (whom we have also purchased coffee from) on the farm Sierra Morena for the last 15 years. The farm is eight hectares (~20 acres) in total. Two hectares are planted with Pink Bourbon, and the rest is planted with Tabi. This farm consistently produces some of the best Pink Bourbon we taste out of the entire region of Southern Huila, and it is an honor to roast and work with their coffees. 

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
