Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 35 hours. Dried on raised beds for 30 days.
We have been working with Jair Arles Galindez for three years now, and his coffee has stood out from the start. Pink Bourbons from southern Huila continue to deliver some of the most expressive profiles we taste each year, and Jair’s lot is no exception. As we deepen our work in this region, we are discovering more nuanced variations in profile, shaped by the diverse terroirs that make Huila so special. Thanks to producers like Jair, the future of this project looks exceptionally bright.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
