Diego Parra is an exceptional producer, and this is an exquisite expression of Pink Bourbon from southern Huila. In the cup we find dark fruit, Key lime, and pomegranate.

Orders are roasted on Tuesday and shipped on Wednesday.

Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry overnight. De-pulped. Dry-fermented for 36 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

ABOUT DIEGO PARRA

Diego Parra has a beautiful 14-hectare (~35-acre) farm nestled in the mountains of southern Huila. This is our first year purchasing his coffee, and we have been deeply impressed by the level of care and attention to detail he brings to his work. This lot is sparkling clean and processed in a way that highlights the beauty of both variety and terroir.

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
