We started focusing a little more on the region of Santa Maria in Huila last year. Guillar Cuéllar is a new producer for us, and we are eager to see this region continue to grow. In the cup we find lemonade, fresh blueberry, and subtle florality.

Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 48 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.
Guillar has spent most of his life working on coffee farms, and a few years ago was able to save enough to purchase his own. He began by buying a small plot from his father-in-law and an adjacent parcel, immediately planting 1,000 Pink Bourbon trees and dedicating himself fully to producing specialty coffee.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
