This is a new selection continuing our exploration of Santa María, Huila. Yana has a stunning Pink Bourbon garden, and we are pleased to be working with her coffee for the first time. In the cup we find rose hips, tangerine, and mulberry.

Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 24 hours. Washed. Dried on raised beds for 15 days.
Yana Quintero is a new producer to us. So much of our sourcing work is built around searching for producers with extraordinary coffee, and each year we continue to be struck by how many we have yet to encounter. Yana is one of them, and it is a privilege to be working with her coffee for the first time.
Pink Bourbon is a variety known for the complexity of its acidity and fruit characteristics. The appearance of the seeds and plant, along with its distinct flavor profile, suggest it may be an Ethiopian Landrace variety. To our knowledge, Pink Bourbon has not yet been genetically tested, and we cannot say with certainty what it is. We hope to have it tested in the near future through our partners at World Coffee Research.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
